Compliments of Chef Steve Collins, The Home Chef. May is National BBQ month so here is a good fun recipe that can be done on the grill with friends and family. The recipe calls for a half a leg of lamb, off the bone, and some basic taco fixings. It can be scaled back for smaller amounts and you can substitute the lamb for another cut of meat you may like better. Marinate the lamb and get the taco fixings ready in advance. Let your guest make their own tacos mixing and matching to their taste. Corn tortillas heated in vegetable oil are best but you can use whatever you like! You can even use pre made tack shells right of the shelf, lazy bones! Lamb Ingredients: Boned ˝ leg of lamb about 3 pounds Olive oil Sea salt Freshly ground black pepper 3 garlic cloves coarsely chopped 1 tsp. cumin 1 Tbs. dried Thyme 1 cup red wine ˝ cup olive oil Directions: Open the leg of lamb. Rub both sides with olive oil and season with salt and pepper. Mix the garlic, cumin, thyme, red wine, and olive oil. Put the lamb in a re-closable plastic bag with the marinade. Seal, make sure the lamb is well coated, and marinate fin the refrigerator overnight. If you have to rush the process let it marinade for al least a few hours. Prepare the grill. This usually requires a cold beer. Not that I always drink it, it's to test the coals and be sure they are hot. The coals will sizzle when you poor a little beer on them if they are ready! When the grill is ready, remove the lamb from the bag. Place the lamb on the grill fat side up and cook for 8 minutes. Turn and cook another 8 minutes. Remove and let rest fat side up on a cutting board while you prepare the tortillas. Tortillas Ingredients: ˝ cup vegetable oil 6 inch corn tortillas Directions: Heat the oil in a sauté pan over medium heat. Put in tortillas and cook for 30 seconds. Turn and cook another 30 seconds. Put on a plate and cover with paper towels. Sides Ingredients: Black beans Ingredients: Directions: Sauté the bacon in a medium frying pan over medium heat till crisp. Remove and save 2 tablespoons of the fat. Add the onion, celery, jalapeno pepper and saved bacon grease and cook about 5 minutes till tender. Add the beans and chopped bacon. Mix it well and keep warm in the oven till ready to serve to your guest. You may want to top it off with some grated or shredded cheese for extra flavor. Set out all the goodies and call your guest to the table. Enjoy it!
