Big Mac's Quesadillas PDF Print E-mail

Okay BBQ fans this isn’t exactly a BBQ recipe but I love this one.  It’s quick and easy, done in 5 minutes and good anytime.  I do it on the grill and in the kitchen.  Kids love it because everyone builds their own version of the quesadilla and gets just what they want!

Put some butter in a medium sauté pan & melt. Place a 10" tortilla in, I like the red tomato and green spinach ones but any will do.  Lay down a bed of shredded cheese then start adding any ingredients you like.  I like the following items and use them in any combination I may have on hand; pepperoni, shrimp, bacon, tomato, ground beef or leftover steak, lobster, olives, chopped green or red peppers, sautéd onions, & mushrooms. Be creative and go hog wild! I use the occasion to clean out the refrigerator if I don’t have my usual favorite ingredients on hand.

Smother the toppings with another layer of cheese and cover that with another tortilla.  When the lower layer of cheese starts to melt well and kind of holds the toppings together flip the tortilla and lightly brown on the other side.
 
When that side is browned to perfection slide it out and onto a cutting board.  Slather the top with sour cream and sprinkle on some chopped cilantro, chopped tomatoes and crushed red pepper, optional for you chickens.

Cut into 8 pieces like a pizza and slide it on to a plate & get to it baby! Eating that is. Goes down well with a cold beer.
