July 2007 Monthly Meeting Report PDF Print E-mail

The Caribbean BBQ Association had the monthly meeting July the 31st at a new location, Porto’s Food Court, and I for one loved the nice cool accommodations of the new restaurant, two bars for super fast service, and a spacious kitchen and serving area made for a real smooth serving operation. The Party Masters, Garry Howard, Chef Ricardo Camayed, new member Javier Rodriguez and I started on Monday night dry rubbing the beef ribs and started slow smoking them on Tuesday morning about 6 am.

Now this part hurts a little but I gotta be honest and say we are not perfect, and all cuts of meat are not created equal.


We had a great team of Party Master and tons of experience in the group but by my standards the beef ribs fell short of our goal of being darn near perfect, in fact it was a little dry. I have always said, just kidding around of course, that BBQ is like sex, when it is good it is really good, and when it is bad it is still pretty good.  It just happened to us, as it will happen to anyone, that this batch of beef ribs came out less than perfect, but we will do it better on the next one for you. I thought the flavor was good, tenderness and texture got a low score this time.

We were really graced with something very special from Emilio and his wife Maria of Smokey’s Rib Joint.  They brought in some lip smacking pork ribs as an appetizer and won first place for that, and they brought is a brisket and a pernil, which were their side dishes.  I have to say they were great and Emilio and Maria have a great BBQ Joint that we should all support whenever you're in the mood for some good BBQ.

The new restaurant and kitchen facility were a pleasure to work in. We had plenty of space for everything and it really made it easier for the Party Masters to serve you.

Our friends at Hawaiian Tropic donated some cool summer beach gifts that were raffled off like a couple of luxury blow up Yachts, T-shirts, beach balls, hats and 30 grade SPF protection.  Thank you Jon for your continued support of the BBQ Association, and for Eric & Eva’s help in running the raffle too.

F.Y.I. - We had 76 RSVP confirmations by cutoff time to order the meat. Of the people that confirmed 34 didn’t show and didn’t cancel. That is nearly 50% no show.  The Association gets hurt every time we but more than we can serve. We ask that you RSVP every month and if you can’t make it be considerate of those serving you and cancel in advance.

We had some fine side dishes and here are the results of the judging and our winners;

1: Appetizers: Emilio and Maria From Smokey’s BBQ with their Smoked ribs

2: Salad: Randall Butt from the Brick House, with his Greek Salad with Blue Cheese Stuffed Black Olives

3: Side Dish: Sal Bravman with Spice Jalapeno Potatoes A gratin

4: Dessert: Sharon Humbert with the Chocolate Volcano

Congratulations to all the winners and keep those side dishes coming.

Three new members joined at the July meeting;  Javier Rodriguez, Emilio and Mari Torres of Smokey's Rib Joint, and Fred Wendt.  Thank you all and welcome the Caribbean BBQ Association.

Okay Pit Master the August meeting will be Party Mastered by Ruth’s Chris Steak House.  Expect something great from these people and don’t miss the meeting August 28th.  More information will follow about two weeks before the meeting.
